Huge halloumi sandwich
This tasty veggie sandwich is a good option when time is short and/or you're doing a quick supermarket sweep to pick up provisions for the kids' tea. It uses ingredients you'll likely find in any supermarket or corner shop; halloumi, bread, humous and salad. I have learnt to always have a stash of gluten-free bread in the freezer so I never get caught short of bread to feed my daughter.
1 pack halloumi cheese
humous (recipe here)
1 lemon, for drizzling over
a few rocket and/or baby spinach leaves
large tomato, sliced
Takes 10 minutes
1. Get a frying pan on a medium heat. Show the kids how to drain the pack of halloumi and cut it into thin slices. Drizzle a little rapeseed oil in the pan and add the halloumi. Cook on both sides until brown and crisping up.
2. Help your children to make the humous (or use shop-bought). Cut up your bread and spread the bottom halves of your sandwiches with humous.
3. Show the kids how to squeeze the lemon; use a little to dress the salad leaves and tomato then season it all with salt and pepper. Layer in your sandwiches with the halloumi, spoon a little extra lemon over the halloumi to taste and eat whilst warm.
